Since I've been traveling for the last six months, nearly 3 of the 4 weeks out of every month - the weeks I'm home I crave good home-cooked meals! This week my hubby and I have been avoiding starches (notice I didnt say carbs - I have to have fruit, yogurt, etc!) to simply be more creative with my cooking and also to stay away from them for a week or so!

Yesterday, my sweet Dad was visiting for the evening, as he had business to tend to in Indianapolis! I cooked up an old favorite that my Mom used to make when we were kids . . .I also made her famous brussel sprouts (ie this is the ONLY way we will eat them!!) and a delightful spinach riviera salad.

Turkey, Spinach and Cheese Burgers:

Ingredients:
-2 lbs Ground Turkey
-1 box of frozen spinach
-2 handfuls of fresh spinach

-2 cups shredded cheese (I used mozzarella this time, but have used feta & cheddar previously) -2 eggs
-Salt, Pepper and Garlic Salt to taste (I use Paula Deen's House Seasoning)

Directions:
Mix all ingredients above, make into 11/2 inch patties. Grill over indirect heat for approximately 10 minutes or until meat is no longer pink. Serve with traditional hamburger topics - ketchup, mustard, lettuce, tomatoes, onions, pickles. .

- 2 lbs brussels sprouts
- olive oil
- course ground pepper
- course ground sea salt
- garlic salt- minced onion
-1 ziploc bag - gallon sized
.
Directions:
Mix all ingredients in ziploc gallon sized bag. Fully coat brussel sprouts. Preheat Oven to 400 degrees. Place brussel sprouts and excess olive oil and spices on cookie sheet, make sure brussel sprouts are not touching. Bake in oven until desired crispyness. (Usually around 15 minutes) Serve hot with meal.

this is how i ususually make my brussel sprouts too! try broccoli the same way if you haven't... it tastes completely different than when steamed. i love love love reading your blog, abbs.
